Dahi Vada

Some recipes are more than just food — they don’t need a special occasion. I still remember the excitement of seeing dahi vada in a big bowl. Yum!!!
The perfectly tender vadas with chilled yogurt, sweet imli chutney (tamarind) and a touch of spice on it. It was a burst of contrasting flavors — cool, creamy yogurt with sweet chutney and a hint of spice.
And the best part? Making it at home is easier than it looks.

Serve it from a big bowl. That first look — white yogurt, dark tamarind, a pinch of spice — is half the joy.
For the vadas
- 1 cup split and skinned black gram (urad dal)
- 1–2 green chilies, finely chopped
- 1 teaspoon grated ginger
- Salt to taste
- Oil for deep frying
- Water as needed for grinding
- A bowl of room-temperature water, for soaking the fried vadas
For the yogurt
- 2 cups thick fresh yogurt (dahi)
- 1–2 tablespoons sugar
- Salt to taste
- 2–3 tablespoons water, only if the yogurt is too thick to pour
For serving
- Sweet tamarind chutney (imli chutney)
- Green chutney (coriander-mint)
- 1 teaspoon roasted cumin powder (bhuna jeera)
- 1/2 teaspoon red chili powder
- 1/2 teaspoon chaat masala
- Fresh coriander leaves, chopped
- Pomegranate seeds (optional)
Instructions
- Rinse the urad dal 3–4 times until the water runs almost clear. Soak it in plenty of water for 4–6 hours, or overnight.
- Drain the dal completely. Grind it in a mixer to a thick, fluffy batter. Add water only 1 tablespoon at a time — the batter should be thick enough to hold a round shape. Mix in the green chilies, grated ginger, and salt.
- Whisk the batter with a spoon or your hand for 2–3 minutes, until it looks light and airy. Drop-test: a small bit of batter should float in a bowl of water. If it sinks, whisk a little more.
- Heat oil in a kadhai on medium heat. Wet your fingers, take a small lemon-sized portion of batter, and slide it gently into the oil. Fry in batches. Do not crowd the pan.
- Fry until the vadas are golden on all sides — about 4–5 minutes. They should not turn dark brown. Lift them out and put them straight into a bowl of room-temperature water.
- Soak the vadas for 15–20 minutes. Then press each one gently between your palms to squeeze out extra water. They should stay soft, not dry or broken.
- Whisk the yogurt until completely smooth. Stir in the sugar and salt. Taste — it should be lightly sweet and a little salty. Keep it chilled until serving.
- Arrange the squeezed vadas in a large serving bowl in one layer. Pour the chilled yogurt over them so every vada is covered.
- Drizzle sweet tamarind chutney and green chutney in thin lines. Sprinkle roasted cumin powder, red chili powder, and chaat masala. Finish with fresh coriander and pomegranate seeds. Serve at once.
Tips
- If the batter is watery, the vadas will soak oil and go flat. Grind thick, then whisk.
- You can fry the vadas a day ahead and refrigerate them. Soak in water and add yogurt only just before serving.
- If the yogurt is thin, hang it in a cloth for 20 minutes. Do not make it too sweet — the imli chutney already brings sweetness.
- For a milder plate, skip the green chili in the batter and keep the spice only on top.
